Tangy Lemon Slice
INGREDIENTS
125g unsalted butter
¼ cup icing sugar mixture
1 cup plain flour for base
¼ cup plain flour for lemon mixture.
3 eggs
1 cup caster sugar
2 teaspoons grated lemon rind
½ cup lemon juice
BASE
Beat butter and icing sugar with electric mixer until smooth.
Stir in one cup of flour.
Press firmly into greased and papered slice pan.
Bake in moderate over for about 20 minutes until lightly brown.
LEMON MIXTURE
Place the eggs, caster sugar, ¼ cup flour, rind and juice in a bowl and whisk until all ingredients are combined.
Pour the egg mixture over the prepared base.
Bake an extra 20 minutes until the mixture is firm.
Cool and dust with extra icing sugar if desired.
