Pineapple Macadamia Fruit Cake

Here is an easy recipe that uses a whole can of pineapple to give your fruit cake a moist fresh flavour. Add some macadamia nuts and it has a truely Australian personality. Ed

INGREDIENTS
1 packet 400g organic dried fruit
1 can crushed pineapple with juice
1 cup caster sugar
125g butter chopped
1 tsp bicarbonate soda
1 cup SR flour
1 cup plain flour
2 eggs lightly beaten
1 tsp mixed spice, sprinkle of cinnamon
Handful of chopped macadamia nuts
Extra nuts for topping

METHOD
Into a large dish place fruit, pineapple, sugar and butter. Microwave until butter melts. Stir. Add carb soda. Stir well and cool.

Add flour, eggs, nuts, spice. Mix well.

Pour into greased and papered pan or dish. Top with roughly chopped macadamia nuts.

Bake 40 mins in moderate oven.
Remove from oven, cover with foil and bake further 50-60 mins. Insert knife to determine when cake is cooked.
