Slow Cooker Chicken Soup

INGREDIENTS

500g boneless skinless chicken thighs
salt and black pepper
2 cups cubed potato
1 cup diced celery
1 large carrot diced
½ medium onion diced
4 cloves garlic, minced
1 bay leaf
1 sprig fresh thyme or ¼ tsp dried thyme
6 cups chicken stock
2 tablespoons fresh parsley chopped

METHOD
Place chicken in the slow cooker. Season with salt and pepper. Add potatoes, celery, carrots, onion, garlic, bay leaf, thyme, and chicken broth.

Cover and cook on HIGH for 2-3 hours or LOW for 6-8 hours.

Transfer chicken to a plate and shred with two forks, then stir back into the soup.

Remove the bay leaf. Serve warm, garnished with chopped parsley.
